Egg less Pancakes with Blue berry Syrup |
This is the history behind pancake day and I thought this day would be
perfect to share my favourite pancake recipe.
I am a pancake addict and
I usually don’t need a reason to eat pancakes, if you are visiting me on a Sunday
you will probably be eating pancakes with me. Here’s a recipe that’s fit for
everybody, it does not contain any eggs and is very simple to make. I used
cinnamon to add a lovely flavour to it but you can replace this with vanilla extract or lemon zest. This would taste great with honey or maple syrup and
some fresh fruits. I love blueberries and maple syrup and I adapted this
blueberry syrup recipe from Nigella’s kitchen, and I absolutely love it for its
taste and beautiful colour.

In a bowl, mix the flour, baking powder, baking
soda salt, cinnamon, sugar and oil until everything is well incorporated.
Add the milk to make a smooth lump free batter (
if its too lumpy just use a hand blender) and leave it aside for 5 Min.
Pancake batter |
Add the melted butter to the pancake batter and
stir briefly.
Heat a pan on medium heat, add a ladle full of
batter. As soon as you start
seeing bubbles( bubble up like a crumpet) flip it, cook for a few seconds and transfer
to a plate ( or foil to keep warm). Repeat the same with the rest of the
batter.
Once it bubbles up like a crumpet, Flip it |
And tuck into these delicious pancakes with
blueberry syrup and some vanilla cream if you like!
Notes
You will have to make sure the pan is on medium heat, if the pan is too hot you would end up with a battery taste pancakes. The blue berry syrup is also perfect with a slice of bread.
